CHESTNUT FLOUR

Chestnut flour

Authentic and gastronomic Corsica invites you to discover a key ingredient of Corsican cuisine: chestnut flour. Immerse yourself directly in Corsican gastronomy and all its AOC appellation products !

Chestnut flour is a know-how that has been reinvented after more than ten centuries of tradition. This dish has been protected since 2006 by a controlled designation of origin, and since 2010 by a protected designation of origin at the European Union level.

The Controlled and Protected Designation of Origin (AOC / AOP) “Corsican chestnut flour” “Farina Castagnina Corsa” is a guarantee of quality according to several criteria, in particular by respecting traditional techniques without chemical treatments for its production, and by using chestnuts from the island.

The horse chestnut, a tree in danger

After years of biological control using the release of Torymus Sinensis, we are witnessing a renaissance of chestnut orchards. The tree has regained vigor and has more substantial foliage: the indicators for the success of biological control are there ! The tree almost regains its former beauty.

To choose and buy your chestnut flour during your stay: you must clearly identify and recognize Corsican AOP chestnut flour, or farina castagnina corsa, the flagship and traditional product of the Corsican chestnut grove.

> The AOP (appellation d’origine contrôlée) Corsican chestnut flour guarantees the origin of your chestnut.

It certifies that the chestnuts used for flour are harvested and processed in Corsica. This is the only true guarantee of origin for the consumer.
